Chocolate Cupcakes recipe
Preparation Time: 15 minutes | Cooking Time: 18 minutes

These basic cupcakes are great for parties, or just as a mid-afternoon snack!


½ cup butter ½ cup superfine sugar 2 eggs 1 cup self-rising flour 2 tbsp cocoa powder 4 oz chocolate chips
1 cup powedered sugar ½ stick butter 2 tbsp cocoa powder Assorted edible decorations (optional)

  1. Grease 12 cupcake cases and place into a cupcake/muffin tin.

  2. Beat together the butter and superfine sugar until pale and fluffy. Add the eggs, one at a time, beating thoroughly after each addition, then sieve in the flour and 2 tbsp cocoa powder. Stir well to combine; fold in chocolate chips, then divide between the prepared cupcake liners.

  3. Bake at 350°F until a wooden skewer inserted into the middle of a cupcake comes out clean (about for about 18 minutes). Allow to cool on a wire rack.

  4. Make the frosting: Soften the butter and gradually beat in the cocoa powder, then the sugar, until you reach the desired consistency.

  5. Top the cupcakes with the frosting and cupcake decorations.
